Inspection Comments | FOLLOW UP FOR #22: THE PREP COOLER AIR TEMPERATURE IS STILL 50-55 DEGREES. THE ONLY TCS FOODS STORED INSIDE ARE CUT VEGETABLES ON ICE. ALL ANIMAL PRODUCTS ARE STORED IN THE WALK-IN COOLER. ALFREDO SAID THAT THE UNIT WAS HOLDING THE PROPER TEMPERATURE THIS MORNING. THIS CHANGE IN TEMPERATURE INDICATES THAT THE UNIT CANNOT RECOVER QUICKLY ENOUGH TO MAINTAIN 41 DEGREES. CONTACT A LICENSED REPAIRPERSON TO MAKE REPAIRS ON THIS UNIT. FOLLOW UP WILL OCCUR ON 9/5/23. DO NOT HOLD ANY TCS FOODS IN THIS COOLER UNTIL IT CAN HOLD TEMPERATURE BELOW 41 DEGREES DURING REGULAR USE. |
